Ingredients (serves 4):
Soup:

3 cups dashi (see here) or 2 tsp. instant dashi powder with 3 cups water

1/3 cup soy sauce

2 Tbsp. sugar

3 Tbsp. mirin (Japanese sweet rice wine)

1/2 tsp. salt
Udon noodle:

4 servings
udon
noodle, boiled (see here)
Condiments:

2 stalks green onion, finely chopped

1 Tbsp. fresh ginger, grated

1 Tbsp. white sesame, roasted

Place all ingredients of soup in a large pot and bring to boil. Remove from heat and set aside until the soup cools down. Keep cold in a refrigerator.

Make
udon noodles according to the
recipe.

Distribute udon noodles in individual serving plates.

Pour chilled soup in individual cups.

Serve with condiments.

How to eat Zaru Udon:
Add condiments to the soup to your taste. Dip the noodles in the soup before eating. Don’t worry if you find it difficult to eat the noodles without slurping. Slurping is OK when eating noodles in Japanese cuisines.
