Red Cranberry Gelatin with Mixed Berries
[For 12 oz. Zojirushi Stainless Steel Food Jars]
Ingredients (serves 1-2):
- 1 to 2 cups ice cubes
- 1/3 cup cranberry juice, unsweetened
- 2/3 cup white grape juice, chilled
- 2 tsp. granulated gelatin
- 2 Tbsp. honey
- 1 cup frozen mixed berries

Ingredients (serves 2-3):
- 2 to 3 cups ice cubes
- 1/2 cup cranberry juice, unsweetened
- 1 cup white grape juice, chilled
- 1 Tbsp. granulated gelatin
- 3 Tbsp. honey
- 1-1/3 cup frozen mixed berries
*This recipe was developed for Stainless Steel Food Jars SW-EAE35/50. Adjustments may be required for making this recipe in other Food Jar models.
*Please make sure not to overfill the food jar with ingredients, as ingredients will expand with cooking, and may cause the lid to burst.

Pre-chill the food jar by filling with ice cubes and water (not included in the ingredients list). Close the lid and allow to chill.

Place cranberry juice in a sauce pan and evenly sprinkle gelatin over the juice surface. Wait for 5 minutes to bloom.

Add honey to the pan, stir over medium heat and bring to just before boil.

Remove from heat and stir in white grape juice.

Drain ice water from the food jar into a large bowl. Add more ice and water if needed to make an ice bath. Place the pan with juice in the ice bath.

Add frozen berries to the pan and stir 2 - 4 minutes or until gelatin starts to thicken. Remove the pan from ice bath.

Pour the mixture into the food jar until 1 cm below the ridge. Close lid, allow jelly to firm for a minimum of 1 hour and up to 6 hours.

Make sure to consume within 6 hours to prevent from spoiling.
