Spring Color Crepe


Ingredients (serves 3-4):

*Omit sugar and vanilla extract if making sandwich crepe.

*This recipe was developed for the Gourmet Sizzler® Electric Griddle (EA-BDC10). Adjustments may be necessary when using other models.

Stir eggs in bowl without creating bubbles. Add sugar, salt, half of milk and half of water and mix well.

Add sifted flour and mix until smooth. Add remaining milk, water, melted butter and vanilla extract and mix well. Strain batter, cover and refrigerate for 2-3 hours.

Turn the Gourmet Sizzler® Electric Griddle temperature control dial to 300°F and preheat for about 15 minutes. When preheating completes, pour 1 ladleful (about 1/2 cup) of batter and quickly spread thinly with bottom of ladle. Cook until lightly browned, flip and cook other side. Remove crepe onto a plate. When making the remaining crapes consecutively, allow the griddle to preheat for 5 minutes at 300°F.

Fill with fruits and whipped cream and fold.

Also use tomatoes, lettuce, ham or tuna for an alternative to sandwich. Omit sugar and vanilla extra from batter.
