Did you know that artichokes are one of the vegetables with the highest antioxidants? This recipe is a great way to recycle your leftover brown rice and turn it into a nutritious meal!

Measure rice accurately using the measuring cup that came with your rice cooker. Rinse rice quickly once, drain and place in the inner cooking pan. If using leftover rice, skip to step 3.
Add water to the corresponding water level for “BROWN RICE,” or as listed in the ingredients. Cook the rice using the “BROWN" setting.
When the rice cooker begins to count down to completion, heat a large frying pan over medium high, add olive oil and onion, and sauté until onion becomes soft, about 5 minutes.
Add artichokes and sauté for 3 more minutes.
Add cooked brown rice, salt, pepper, lemon zest and mix well until heated through.
Turn off the heat and mix in the dill.
Serve and enjoy for any meal of the day!
