Dorayaki is a mini pancake sandwich filled with sweet adzuki paste. It is one of the many traditional Japanese confection that is still popular today. Fill with fruits and/or cream for variety.
Ingredients (makes 4):
*This recipe was developed for Gourmet Sizzler® Electric Griddle (EA-DCC10). Adjustments may be necessary when using other models.
In a bowl, whisk egg until color lightens.
Add sugar, honey and water and mix well.
Sift flour and baking powder. Add to egg mixture from step 2 and mix lightly. Cover the bowl with plastic wrap and let rest for 20 minutes at room temperature.
Turn Gourmet Sizzler® Electric Griddle / EA-DCC10 temperature control dial to 300°F.
When the operation light of the griddle turns off, use a heat resistant brush and brush hot plate with oil, then lightly wipe with paper towel to evenly coat the pan.
Pour 1-1/2 tablespoons of batter onto the griddle to make 3 inch circles. Repeat for 7 additional pancakes.
Cook until the edges are set and bubbles form on the surface – about 1-2 minutes. Flip the pancakes using a silicone spatula or the stainless steel spatula that came with your product. Cook for another 15-20 seconds, or until cooked through.
Turn heat off and transfer pancakes to a plate. Divide adzuki bean paste into four. Take a pancake and layer the paste to a pancake. Place another pancake over to sandwich the paste, or wrap in plastic wrap if you are serving later to keep fresh.
