Great recipe to transform the leftover Japanese curry into another comfort meal!
Ingredients (serves 4):

You will need a 9” x 13” casserole dish.
Lightly coat inside of casserole dish with a small amount of oil (not included in the ingredients list) and set aside.
In a large frying pan, melt 2 tablespoons of butter over medium heat. Add cooked rice and salt to the pan, gently stir and cook for 1 minute. Turn heat off and transfer the buttered rice to the oiled casserole dish.
Preheat oven to 400ºF.
Prepare the white sauce. In a frying pan, melt 4 tablespoons of butter over low heat. Add flour and stir until smooth.
Stir in milk, chicken bouillon powder and black pepper. Bring to a boil over medium heat, stir continuously and cook about 1 minute. Turn heat off and pour sauce over the rice in the casserole dish.
Spread curry over the white sauce and top with mozzarella cheese.
Place dish in heated oven and bake for 15 minutes or until cheese melts and curry is bubbling.
When baking completes, garnish with optional minced parsley and serve immediately. Enjoy!
