Quick-rise bread is made using rapid dry yeast. Rapid rise yeast is used when baking quick breads as they allow the bread to rise faster. These yeasts are finely granulated when compared with active dry yeast, which shortens the time to complete the hydration of yeast during the RISE cycle. That's why for the QUICK setting, the REST time is shorter and there is no RISE 3. It is an ideal bread to bake especially for busy bakers.
