Sweet rice with adzuki beans, or sekihan, is often served at special occasions such as birthdays, weddings and holidays. The red color is believed to ward off evil spirits and bring happiness.
Ingredients (serves 4-5):
Rinse rice and drain in a strainer for 30 minutes or more.
Rinse the adzuki beans in a colander, place in a saucepan with 2 cups of water and boil for 2 minutes. Add 3 cups of water and boil for an additional 20 minutes until the beans become soft enough to break by pressing with your fingertip. Drain the beans but reserve the stock.
Place the rice from step 1 into the Inner Cooking Pan, add the soup stock from step 2, and add water to fill to water level 3 for “SWEET RICE.” Mix well, stirring from the bottom of the pan, place the adzuki beans from step 2 on top, and level the surface.
Use the MENU button to select the “SWEET” setting, then press start.
When the rice completes cooking, open the lid and loosen the rice. Serve in a bowl and garnish with salt with parched sesame on top.
