Do you like tacos but wish they were a bit more filling? Then give this recipe a try. If you have a favorite taco meat other than beef, substitute with it instead!
Ingredients (serves 4):
Heat vegetable oil in a medium sauté pan over medium heat. Add garlic, onion and sauté for approximately 3 minutes. Turn heat to high, add ground beef to the pan, break apart with spatula and cook through for about 5 minutes.
Add soy sauce, chili powder, cumin, salt, and pepper. Cook for 3 minutes or until most of the liquid is evaporated.
Fill each serving bowl with 1 cup of cooked rice. Top with cooked beef.
Sprinkle cheese over the beef, top with lettuce, tomatoes and salsa.
